Dubu-jorim (spicy soy-braised tofu)

Dubu-jorim is an everyday banchan that turns a plain block of tofu into something you will want to eat straight from the pan: golden slices simmered in a spicy, garlicky soy sauce until it soaks right in. Press or pat the tofu very dry before frying so it browns rather than steams, and do not move the slices until they release easily from the pan. It is good hot with rice, and just as good cold from the fridge the next day.
