Gyeran-mari is the lunchbox side dish every Korean child knows: thin layers of egg rolled up into a soft, golden log with flecks of vegetable inside. Low heat is the whole secret. Each layer should set on the bottom while the top is still a little wet, so it glues itself to the roll, and the outside should stay yellow rather than browned. A rectangular pan is handy, but a small non-stick frying pan works fine. Let the roll rest for a few minutes before slicing.
Ingredients
- Eggs4
- Milk or water1 tbsp
- Salt1/4 tsp
- Carrot, finely chopped2 tbsp
- Green onion, finely chopped1
- Neutral oil1 tsp
Steps
- Beat the eggs with the milk and salt until smooth, then stir in the carrot and green onion.
- Heat a non-stick pan over medium-low heat, wipe it with a little oil, and pour in about a third of the egg, tilting to cover the pan.
- When the bottom has set but the top is still slightly runny, roll the egg from one side to the other with a spatula.
- Push the roll to the far end, oil the empty part of the pan and pour in half the remaining egg, lifting the roll so the new layer runs underneath it. Roll again when it is nearly set.
- Repeat with the last of the egg. Press the sides of the roll in the pan for 30 seconds to firm it up.
- Rest for 5 minutes on a board, then cut into 2 cm slices.
