Jjajangmyeon is Korean-Chinese comfort food: thick wheat noodles under a glossy, savoury-sweet sauce of pork, onion and chunjang (Korean black bean paste). It is the classic takeaway on moving day, and the dish single people eat on Black Day in April. Chunjang is different from Chinese black bean sauce, so look for it in Korean shops. Fry it in oil for a few minutes first: this removes its raw bitterness and is the step that makes the sauce taste like the restaurant version. Plenty of onion gives sweetness without too much sugar.
