Samgyeopsal 101: let the table grill do the work

삼겹살 · Samgyeopsal
My first samgyeopsal (grilled pork belly) dinner was a team dinner, and I spent the whole night trying to flip the meat before someone politely took the tongs from me. Here's what I've learned since. You don't really cook it yourself. Staff will often grill and cut it with scissors, so let them. When it's golden, grab a lettuce leaf, add pork, a dab of ssamjang (spicy bean paste), grilled garlic and a bit of kimchi, and eat the whole wrap in one bite. One bite. Trust me. Order a bottle of soju for the table, and at the end, ask for fried rice made in the leftover fat. Best part of the night.
