Budae-jjigae (army base stew) for sharing

Budae-jjigae was born in the hungry years after the Korean War, when cooks near US army bases combined sausages and canned ham with kimchi and gochujang. Today it is a beloved, unapologetically indulgent sharing stew, cooked in a wide pot in the middle of the table. Arrange everything neatly in the pot, pour over the stock and let it bubble away as you eat. Add the instant noodles only when the stew is boiling and eat them quickly, before they soak up all the broth. A slice of cheese melting on top is optional but very popular.
