Dolsot bibimbap and the crispy rice at the bottom

비빔밥 · Bibimbap
I ordered dolsot bibimbap in Seoul because the stone bowl was still sizzling when it arrived, and I've been chasing that sound ever since. Rice, a rainbow of seasoned vegetables, a fried egg and gochujang (chilli paste). Mix it all thoroughly before you eat, and then leave it alone for a minute: the hot stone bowl turns the bottom layer of rice golden and crunchy. That nurungji (scorched rice) is the best bit. It's one of the easiest dishes to order vegetarian: just ask for no meat. If you're careful with spice, ask for the gochujang on the side and add it gradually.
