Chimaek: why Korean fried chicken hits different

양념치킨 · Yangnyeom chicken
Chimaek = chicken + maekju (beer). It's less a dish than a whole evening. Korean fried chicken is often fried twice, so the skin stays crackly even under sauce. Order "ban-ban" (half and half) to get both: plain fried and yangnyeom, the sticky sweet-spicy glaze. It comes with a small dish of pickled radish cubes, which cut through the grease perfectly. Don't skip them. On a warm night, people take delivery chicken to a park by the river, and somehow the delivery riders always find you.
