Jjimdak was born in the market town of Andong and is now a nationwide favourite for sharing: chicken braised in a dark, sweet soy sauce with potatoes, carrots and dried chillies, finished with slippery glass noodles that soak up the sauce. Dried red chillies give a gentle background heat; add more if you like it spicy. Put the soaked noodles in only for the last few minutes, as they keep absorbing liquid. If the sauce gets too thick, loosen it with a splash of water.
