Bibim-guksu is a summer lunch made in the time it takes to boil a kettle: thin wheat noodles chilled in cold water and tossed in a sweet, sour and spicy gochujang dressing, with crunchy cucumber and kimchi on top. The key is rinsing the noodles thoroughly in cold water, rubbing them between your hands until the water runs clear, so they turn springy instead of gummy. Make the dressing first and let it sit while the noodles cook; the flavours come together in just a few minutes.
