Hotteok is Korea's favourite winter street snack: a soft, chewy yeasted dough wrapped around brown sugar, cinnamon and nuts, then pressed flat in a hot pan until the filling melts into a syrup. A little glutinous rice flour in the dough gives the classic chew; if you cannot find it, use all plain flour. The dough is sticky, so oil your hands well before shaping. Let the pancakes cool for a minute before biting in, as the syrup inside is extremely hot.
재료
- Plain flour200 g
- Glutinous (sweet) rice flour50 g
- Instant yeast1 tsp
- Sugar1 tbsp
- Salt1/2 tsp
- Warm milk200 ml
- Neutral oil, plus extra for frying1 tbsp
- Dark brown sugar60 g
- Ground cinnamon1 tsp
- Mixed nuts or seeds, chopped30 g
만드는 법
- Mix the flours, yeast, sugar and salt. Add the warm milk and 1 tbsp oil and stir into a soft, sticky dough. Cover and leave somewhere warm for about 1 hour, until doubled.
- Mix the brown sugar, cinnamon and nuts for the filling.
- Knock back the dough and divide it into 8 pieces. With oiled hands, flatten one piece in your palm, put a spoonful of filling in the middle and pinch the edges together to seal.
- Heat 2 tbsp oil in a frying pan over medium-low heat. Place the pancakes sealed side down and cook for 1 minute.
- Flip and press each one flat with an oiled spatula or the base of a cup to about 1 cm thick. Cook for 2–3 minutes until golden.
