Gamja-jorim is one of the most common banchan (side dishes) on a Korean table: small cubes of potato braised in soy sauce until sticky, sweet and savoury. It keeps for days in the fridge and is just as good cold. Rinse the cut potatoes to wash off the surface starch, so they hold their shape. The shine comes at the very end: once the potatoes are tender, turn the heat up and add the syrup, stirring until the sauce clings to every piece.
材料
- Potatoes, cut into 2 cm cubes500 g
- Neutral oil1 tbsp
- Soy sauce3 tbsp
- Sugar1 tbsp
- Water200 ml
- Garlic, minced1 tsp
- Rice syrup, corn syrup or honey1.5 tbsp
- Sesame oil1 tsp
- Toasted sesame seeds1 tsp
作り方
- Rinse the potato cubes in cold water two or three times, then drain well.
- Heat the oil in a pan over medium heat and fry the potatoes for 4–5 minutes until the edges turn translucent.
- Add the soy sauce, sugar, water and garlic. Bring to a boil, then cover and simmer over medium-low heat for 10 minutes.
- Uncover and cook over medium heat, stirring now and then, until the potatoes are tender and only a little sauce remains.
- Add the syrup and stir over medium-high heat for 1–2 minutes until glossy. Finish with the sesame oil and seeds.
